My os is Mepis 3.3.1, and I will connect the scanner: EPSON Perfection 2580 Photo.

Epson scanners generally work well with Linux and MEPIS.
I can't remember MEPIS 3.3.1 now, but look for Graphics --> Kooka in your menu, or right-click the desktop, choose Run Command, and enter Kooka. You could also download and try Xsane (which I prefer) or Quiteinsane. As soon as you open any of these programs, it will search for an available scanner and, if it finds one, you should be set to go.
Scaner - Instalation SANE
Now I'm requested to install and configure SANE correctly on my system, MEPIS 3.3.1
There are my questions:
Where can I download SANE ?
Are there different types of SANE ?
How do I can install SANE ?
How have I to configure SANE ?
I have never instaled nothing on this OS jet.

Use Synaptic, search for "sane," and follow the Wiki directions to install it.
Since I no longer have MEPIS 3.3.1 installed, I can't give you detailed advice for that version, but I suspect once you have Sane and Kooka installed, everything will run by itself once you open up Kooka with the scanner attached and on (as long as it is supported).
And don't forget Google (e.g., "configure Sane").
