Since Audacity is a

Since Audacity is a multi-track recording / mixing program it has it's own .aup xml file format to keep all the tracks, markers, levels, etc. so you can keep working on the project when you reload it. If you just want a file to listen to then you use one of the Export as options. Audacity will let you export your music as wav, mp3, or ogg.

I haven't found a way to make .aup files open Audacity with a left click without having every text file open Audacity as well. It appears that .aup files are written with a "plain text" MIME type. You can Right Click -> open with -> Audacity.
